Where in the world is Ecuador?
Ecuador sits right on the equator. That’s where the name comes from. It’s on the northwest shoulder of South America — Colombia to the north, Peru to the south and east, the Pacific to the west. About the size of Colorado, and inside that it fits three different worlds: a warm Pacific coast, the high Andes, and the edge of the Amazon rainforest. Another 600 miles out to sea are the Galápagos Islands, the ones we’re named for.
And the people?
Ecuador is home to around 18 million people, and it’s a real mix: Indigenous Kichwa and a dozen other native nations, mestizo and Afro-Ecuadorian communities, montubio farmers and fishers from the coast. Spanish is the common language, with Kichwa and other Indigenous languages spoken right alongside it. What holds it together is family. Long meals where everyone has a seat, and feeding the people you love until they can’t move. That’s what we carried north, and it’s how we cook.
